Peas and Prosciutto (Makes 6 servings)

¼ cup Flavored Olive Oil (see recipe)
½ cup finely chopped onion
½ cup diced prosciutto
1 15-ounce cans green peas, drained, or 2 cups fresh peas, cooked
1 cup chicken broth
Salt and pepper to taste

1. Heat oil in a large sauté pan over medium heat.

2. Add onion and sauté for 3 minutes or until translucent. Stir in the prosciutto and sauté for an additional 3 minutes.

3. Add the peas, broth and salt and pepper. Cook for about 3 minutes or until hot.

4. Drain off all liquid.
